Can you explain please why cheese is considered a “neutral” and does not fall under the category of Dairy?

Cheese is considered a dairy. However, it is neutral in its impact on the body when trying to enter into ketosis during the Mend-A-Blast phase. (It will have neither a negative or positive impact).
